Banana Low Sugar Flax Muffins


Ingredients:


1 1/2 large bananas
2.5 TB sugarleaf (low sugar substitute)
1/2 cup ground flax seeds
1/2 egg
1 -1 1/2 tablespoon milk
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup AP flour



Directions:


 1 Preheat oven to 350°F.
 2 Grind flax seeds or use flax meal
3 Mash bananas.
4 Mix bananas, flax and egg.
5 Mix dry ingredients together and add.
6 If needed add milk, one tablespoon at a time.
7. Fill muffin cups
9 Bake for 16 minutes.
10. Serve it warm or can put in microwave for 5-10 seconds.  Add a dab or two of butter and enjoy!
